In a large salad bowl, toss together the cooked quinoa, chicken, broccoli, carrots, shredded cabbage, and as much of the dressing as desired. Add the blue cheese and half of the green onions. - To assemble the salads, combine lettuce, carrots in bowl or on plate. Season lightly with salt and pepper, then toss. Top with an equal amount of green onions , then add the buffalo quinoa bites on top. Cover with feta cheese, then drizzle with the dressing and add any remaining buffalo sauce.
