The Thai variety has a longer grain than Japanese or Chinese sweet rice. Although in Thailand sticky rice is steamed in long funnel-like baskets, our method, even if it's not strictly authentic, gives extremely delicious rice and is much easier to make. Important: Black sticky rice does bleed when it is steamed, so make sure you use cheese cloth or a separate steaming basket for black rice versus when you are making the usual white sticky rice. As in the traditional method, you must wash the rice thoroughly to remove the excess starch from the outside of the rice otherwise you will end up with the rice all stuck together.

Steps to make Steamed Sweet Rice / Sticky Rice:
  1. Pour sticky rice in a bowl and rinse it twice with water.
  2. After rinsing, put about 2 cups of water to cover the rice and soak at least 4 hours or overnight for best results.
  3. Put 3 cups of water in a rice cooker pot.
  4. Put the streamer tray in the pot.
  5. Strain water from the soaking rice.
  6. Put the rice in the steamer tray. It's ok if a little of the rice falls through into the water.
  7. Set the rice cooker into steam mode to cook it and push start.

It is widely consumed across Asia. It is called glutinous (Latin: glūtinōsus) in the sense of being glue-like or sticky.
