This chickpea omelette is the best invention for a vegan breakfast since sliced bread! It's vegan, gluten-free, soy-free, and of course egg-free, yet tastes surprisingly similar to egg omelettes!

The ingredients needed to make Vegan omelette:
  1. Make ready 1 (300 g) Pack silken tofu
  2. Prepare 300 g any raw mixed vegetables-broccoli, bell peppers, carrots, spring onion, mushroom etc
  3. Make ready Oil for frying (or FryLight)
  4. Get 1 teaspoon Onion powder
  5. Prepare 1 teaspoon garlic powder
  6. Make ready Cornflour slurry (1 heaped teaspoon & a bit of cold water)
  7. Get Salt and pepper
  8. Get 2 tablespoons nutritional yeast

Omelettes that'll have you om-nom-noming for days! I tried the omelettes on a cast-iron pan and a stainless steel pan. Maybe I'm just crap at cooking but with both pans, the omelettes stuck 🙁. It's essential to use a truly non-stick skillet to make the omelet come out of the pan intact.

Instructions to make Vegan omelette:
  1. Fry the chopped mixed vegetables gently until soft
  2. Blend the tofu & other ingredients until mixed and smooth. Add a little water if it’s too stiff but you want it quite thick. Taste and season as desired.
  3. Spread the tofu mixture into 4 silicone moulds, that are lightly greased. Then add the mixed vegetables pressing them into the tofu.
  4. Bake on 160° C for about 50-60 minutes until firm. Turn out onto a plate and serve with buttered toast or spicy beans. Enjoy!! 😀
