Ingredients: The Non Fried Sweet Potato and Oatmeal Kofta Curry is a perfect blend of the goodness of sweet potatoes and the nutrition from the oats. The addition of oats into the kofta's makes them nutritious and a great way to get them into your diet.   9. Heat a saucepan. Add oil and onion paste.
  10. Saute for a minute. Add ginger-garlic paste and chillies.
  11. Add orange and plum juices and give it a boil.
  12. Add salt, sugar and red chilli flakes.
  13. Cook the gravy for about 5 minutes to thicken it.
  14. Add the prepared koftas and mint leaves.
  15. Stir gently. Simmer for 3-4 minutes.
  16. Take 1 teaspoon of Cornflour and mix with 2 tablespoons of water.
  17. Add the mixture to the kofta curry and mix.
  18. When the gravy comes to desired consistency, check the seasoning and remove from heat.
  19. It will taste sweet, sour and little pungent with citrusy flavour.
  20. Serve this sweet and sour kofta curry with steam rice or chapati.

Put the rest of the onion mix into the frying pan (tip out any excess oil first), and add the tomatoes, sugar and vinegar. Heat ghee with oil and add bay leaf, cumin seeds and red chilly. Add onion paste ,ginger garlic paste after masala crackles. Add all the dry masala with little water, mix well and pour into fried onion paste. The crispy outer layer, soft and creamy inner layer and tomato and onion based spicy gravy is a marriage made in heaven.
