So, today I bring you my crazily adapted recipe and what has become my favorite vegan mac and cheese-with no refined oil.

Instructions to make MacNoCheese vegan:
  1. Chop and fry the onion with the chilli flakes and any other spices you feel like. After a few mins add the chopped garlic too.
  2. Chop and add the rest of the veg. I like to add leek because it gives a stickier texture to things somehow. Mushrooms and pepper just cos I felt like it, you can leave em out. Fry until soft
  3. Add all the macaroni you like, then enough milk alternative (I use oat) to cover and cook the pasta instead of using water. Add the yeast flakes, salt and pepper, and basil.
  4. Cook on a med-high heat until the pasta is cooked and there is no more liquid in the pan - keep an eye cos it might stick and burn! Add grated cheese and mix before serving if you want a good thicc cheesy sauce, but I haven’t bothered here. Eat!
