- Take corn tortillas
- Get each of poblano peppers, zucchini, onion, yellow squash
- Take mexican chorizo. The soft breakfast kind
- Take queso oaxaca or any other melty, chewy white cheese
Spoon a ladle full of the mixture into the hot pan and cook until golden. Continue until all the mixture is cooked and you have a stack of pancakes. Stir the reserved coriander into the crème fraîche. Finely chop the reserved chorizo/onion mix and sprinkle over the crème fraîche.
Steps to make Chorizo and veggie stack:
- Cook chorizo on medium heat, once its half way cooked add all veggies. Once done remove from pan leave remaining oil in pan.
- Fry tortillas one at a time in chorizo oil if you need to add a teaspoon of lard that is fine. you want them to be crunchy so they can hold the veggies without tearing.
- When you are on the last tortilla and its almost done start layering the veggies mix and cheese. Add 2nd tortilla and repeat. Turn up heat to medium high and cover just till cheese melts.
Vegan chorizo with all the flavor - I found this soy chorizo from Trader Joe's about a year ago and I fell IN LOVE. It has all the same salty and spicy flavors of the chorizo I grew up with, but it's made of soy so all my vegetarian friends can enjoy! This is the chorizo I go for when I'm serving it to any of my vegetarian friends. Heat coconut oil in a medium saucepan over medium-high heat. Chorizo will start to release some fat, in which the vegetables will cook.
