- Preheat oven to 350°F.
- In large skillet cook ground beef and onion until meat is browned and cooked through.
- Meanwhile in a large sauce pan over medium heat throw in cubed cheese, and milk. Stir often cook until cheese is melted. Add in can of rotel. Mix to combine. Turn heat off
- Lightly grease large rimmed baking dish set aside. Spoon some cheese inside and scoop ground beef on top. Roll into a burrito, place in baking dish. Repeat with remaining tortillas.
- Pour in Velveeta, rotel mixture over top. Bake 10 minutes until cheese is bubbly.
