- In med. bowl, combine beef, flaxseeds, egg, basil, oregano and salt. Form 24 one-inch balls.
- In large skillet, heat oil. Cook onion and garlic. Add meatballs and cook 10 min, turning to brown all sides and no pink inside.
- Pour sauce into skillet and heat through. Remove meatballs and sauce to covered dish to keep warm.
- Add zucchini to skillet and cook covered about 3 min, tossing occasionally, until soft.
- Serve "noodles" topped with meatballs and sauce.
Please don't wipe out the pan. the oil, in which the meatballs were cooked, is what flavors the tomatoes and makes the sauce! To brown the meatballs, heat olive oil in a heavy pot or large skillet over medium-high heat. Remove and drain on a paper towel after each batch. In the same pot, add the onions and garlic and cook for a few minutes, or until translucent. Heat a frying pan over a medium heat and add the olive oil.
