Cabbage Thoran is a stir fry made using cabbage and coconut. You can prepare the thoran using cabbage, or a combination of cabbage and carrot, or even cabbage, carrot and capsicum. There are so many different ways to prepare a thoran. Kerala Style Cabbage Stir-Fry A delicious, crisp and easy to make stir fry.
Instructions to make Cabbage thoran (Kerala style):
- Crush the grated coconut with turmeric powder, a pinch of chilli powder, garlic and cumin seeds. Keep aside
- In a pan, heat oil and add mustard seeds. Add the urad dal and roast.
- To it add the red chilli and the curry leaves.
- Add the chopped onion and green chilli and saute well. Add salt to taste.
- Once the onion is sauted, add the shredded cabbage and saute.
- After 2 minutes add the crushed coconut mixture and and combine everything.
- Cover the pan on low flame for about 6 minutes. The cabbage will be cooked by this time
- Open the lid and saute for another 3 minutes so that the cabbage thoran will be dry.
- Serve with hot rice.
