The ingredients needed to make Easy Date Loaf:
  1. Make ready 1 tsp Bicarbonate of soda
  2. Make ready 225 grams Dates chopped
  3. Get 225 ml Water
  4. Make ready 1 tbsp Butter
  5. Get 225 grams Sugar
  6. Prepare 1 Egg beaten
  7. Get 450 grams Self-Raising Flour
  8. Get 1 pinch Salt
  9. Prepare 1 tsp Vanilla Essence

In a large bowl combine the dates, butter, Weetbix, sugar, baking powder, baking soda and boiling water. Beat sugar, egg, vanilla essence and walnuts (if using) into date mixture. Sift in flour and baking powder and stir until just combined. Divide the mixture between the lined loaf tins.

Steps to make Easy Date Loaf:
  1. Preheat oven to 180°C/Has Mark 5.
  2. Sprinkle bicarbonate of soda over chopped dates and add hot water.
  3. Beat the butter and sugar well, then add beaten egg, mixing well. Add the date mixture, flour, salt and vanilla essence. Mix well.
  4. Put the mixture into a lined 900g (2lb) loaf tin and bake for 1 hour or until firm on top and a skewer inserted comes out clean.
  5. Take out the tin after 10 minutes and cool on a wire rack.

Cool on a wire rack when done. The extra load can be frozen when cooled down.
