  8. Bake for 20mins (depending on size of your cupcakes). Check with a skewer to see if the cakes are done. skewers should pull out clean. If there is mixture on the skewer bake for another 5mins and do another skewer check.
  9. When done let it cool for 5 - 10 mins.
  10. You can add any type of topping you want on the cup cakes. For instance: butter cream, icing sugar or chocolate ganache.

Kelly's Notes: Beating the frosting in between each addition of the powdered sugar lightens the color of the frosting and will make it more white in color (rather than yellow). For the Piñata cupcakes, I have used my go-to basic vanilla cupcake recipe. The cupcakes are soft, light and deliciously springy. I cored the centres of the cupcakes and poured in oodles of sprinkles to make the piñata effect. I went with a standard vanilla buttercream icing which I've tinted different shades to get the rainbow effect. step two: prepare the big frosting bag.
