  6. Line them up on a sieve so that they don't overlap. Leave them out to dry in a sunny place, like on a sunny balcony.
  7. After a day, turn the sweet potato pieces over. Turn them again the next day. I left them out overnight too. They are done in about 3 days!
  8. Failed attempt No. 1: I steamed big sweet potatoes for about 50 minutes. Maybe I didn't steam them for long enough, but the sweet potatoes weren't soft in the center.
  9. This is how they turned out on my first try. They were delicious, but not sticky enough.
  10. Failed attempt No. 2: I baked the potatoes for an hour and 15 minutes in a 150 °C oven, then tried to cut the potatoes before they were cool but the centers were still raw…yet again!
  11. I finally succeed on the third try! Yay!! I think the reason this succeeded was because I left the sweet potatoes to cool down in the oven.

Spread them out in a single layer with enough space in between. Put the cooling rack into a baking tray, slip it in the oven, and keep the oven door slightly open. Wash the sweet potatoes and set them out on your cutting board. To cut a potato lengthwise, slice a small piece off the bottom and stand the potato up on this cut end. Use a sharp knife to cut slices from the potato to a maximum thickness of one quarter of an inch.
