Lumaconi is great for stuffing but the pasta did not double in size upon boiling as anticipated but seemed larger at the end of baking. Lumaconi are pasta in the shape of giant snails (see right) and are so large they are best served stuffed and baked (much like you would canneloni). I got rather excited when I found them as I always love an opportunity to make a baked pasta dish. So, I bought them without hesitation and planned the dish I would make Scotty that night for dinner.
Instructions to make Stuffed Lumaconi:
- Boil Lumaconi pasta according to package instructions.
- Chopped spinach and saute with butter and pinch of salt and pepper - Heat oil in a pan add garlic and saute for 2 minutes add mince and cook till color change. - Than add salt, vinegar, chilli flakes, and cook till done. - Transfer into a clean bowl and add sauted spinach, cheddar cheese, cream cheese and mix well. - Set aside.
- For white sauce heat butter in a pan add flour and cook for 1 minute then gradually add milk and whisk well in slow flame then add all other ingredients of white sauce and cook till sauce thick.
- In a baking dish spread Pasta sauce.
- Stuffed chicken mixture in pasta and layer over pasta sauce.
- Spread white sauce over pasta. - Spread some mozarella cheese on it. - Top with olives.
- Sprinkle some oregano leaves and baked in preheated oven for 20 to 25 minutes in 180 degrees till cheese melt.
- Serve hot with your favorite beverage like mojito or margarita.
