In a bowl, mix the almonds, cinnamon, cardamom and salt. In a separate bowl whisk the tahini, maple syrup, vanilla, orange zest and orange blossom water together. Add the wet ingredients to the dry ingredients..   1. Pre-heat oven to 170°C
  2. In a bowl, mix the almonds, cinnamon, cardamom and salt.
  3. In a separate bowl whisk the tahini, maple syrup, vanilla, orange zest and orange blossom water together.
  4. Add the wet ingredients to the dry ingredients. And mix well into a dough.
  5. Take a dessert spoon full of the dough, roll it into the palm of your hands and flatten slightly. Place on a lined baking tray.
  6. Sprinkle with some flakes of sea salt and put an almond on the top.
  7. Bake for 12 to 15 minutes remove from oven when the bottom of the cookie is golden brown. Let them cool.
