We've made it to the end of the year, and the month of December is about indulgences. This is one of my favourite pastas, but I must start with a warning: it isn't as easy on the eye as on the palate; this is a dish made for pleasure not a photo-op.

Instructions to make Creamy courgette and chicken pasta:
  1. put the pasta onto boil
  2. fry the onion, pepper, courgette and chicken in same pan so they absorb the flavour
  3. drain off the pasta
  4. add the vegetables and the chicken into the pot with the pasta
  5. add in the creme fraiche and mix through
  6. add in about three quarters of the cheese and allow to melt in
  7. serve up sprinkling the remaining cheese on top
  8. also delicious cold!

In order for the courgettes to acquire the sweet, braised flavour they imbue the pasta with here, they are cooked to a squashy khaki. Add the pasta to the cream then serve on plates. Spoon over the griddled chicken and vegetables. This creamy chicken pasta is my all time favourite pasta recipe. With just a few simple ingredients and a pressure cooker or instant pot you can have a filling dinner on the table even on the busiest of weeknights!
