The ingredients needed to make Quick Cauliflower Fry:
  1. Prepare 3 cups cauliflower florets
  2. Get 2 onions medium Chopped
  3. Get A pinch Asafoetida of (Hing)
  4. Get 1 tsp Cumin seeds (Jeera)
  5. Take 1 tsp Mustard seeds (Rai)
  6. Get 1 tsp garlic Minced
  7. Take 1/2 tsp Turmeric powder (haldi)
  8. Get 2 tbsps Oil
  9. Prepare 1 tsp Chili powder
  10. Take 1 tsp Garam masala
  11. Get 2 tbsps coriander Chopped
  12. Get 1 tsp Salt
  13. Prepare 1/2 tsp Lime juice
Steps to make Quick Cauliflower Fry:
  1. Wash the cauliflower, cut into florets; soak the florets in turmeric and salt water for 15 minutes to remove the dirt.
  2. After fifteen minutes, wash thoroughly under running water and set aside to drain the excess water in a colander.
  3. Take a heavy bottom or a non stick pan; I used my iron kadhai for this (I try and use it as often as possible) add the oil.
  4. Once the oil is hot, add asafoetida (hing), then the minced garlic, cumin, mustard and sauté for 10 seconds, and then add the chopped onions.
  5. Sauté the onions till golden brown, and then add the turmeric powder and red chili powder.
  6. Add the cauliflower florets along with ¼ th cup of water to the pan. Cover and cook for 7 – 10 minutes till the florets become tender.
  7. After 10 minutes, add the garam masala and salt, adjust the seasoning as per taste.
  8. Once the cauliflower florets are cooked remove them from heat.
  9. Serve hot with phulkas or chapattis.
