- Prepare 1 chicken breast cut into small pieces

- Get oil for deep frying
Wrap shaped onigiri with a strip of nori. O-nigiri, also known as o-musubi, nigirimeshi, rice ball, is a Japanese food made from white rice formed into triangular or cylindrical shapes and often wrapped in nori. Traditionally, an onigiri is filled with pickled ume, salted salmon, katsuobushi, kombu, tarako, mentaiko or any other salty or sour ingredient as a natural preservative. Most Japanese convenience stores stock their onigiri with various fillings and flavors.
Instructions to make Rice balls:
- In a skillet using the 1tbsp oil, fry the onions and garlic until the onions are transparent.
- Add chicken pieces. Add salt, pepper, chilli, parsley, coriander and mushrooms to the chicken and let it cook until the chicken is cooked through
- Add flour and milk and stir well so flour does not clump. Allow it to cook until it is no longer liquidy. Mix in mozzarella and parmesan
- Fold the chicken into the boiled rice and allow it to cool
- Peel and mash the potatoes. Add some salt, black pepper and oregano.
- Make small balls out of the rice mixture. Coat them in the mashed potatoes. Dip in egg and roll in bread crumbs. Deep fry the balls.
D Form rice balls with wet hands, using a heaping ice cream scoop for each. Stuff each rice ball with a cube of mozzarella cheese and form a tight ball with the rice mixture to enclose the cheese. These cheesy fried rice balls are served with Italian dinners as a side like a bread. They're great with sauce and pasta dishes. You can use leftover rice or risotto in these rice balls.
