  7. Start deep frying. Fry root vegetables for 3-4 mins. Mushroom 1-2 minutes. Do not over crowd the pot. Transfer tempura to a wired rack or paper towel to remove excess oil. Between batches remove the crumbs which will burn and turn the oil darker.

The batter can even be used to make onion rings. Serve the tempura with your favorite dipping sauces and enjoy as an appetizer or light meal. The difference between good and bad tempura is the batter the goal is a light, crisp coating that doesn't absorb oil when fried.
