- Cut cauliflower into florets discarding the hard stems. Parboil cauliflower and green peas. Heat oil in a pan and fry cauliflower lightly. It should not change the colour. Meanwhile make a paste of curd, cashewnuts,charmagaz. Also make a paste of onion, malai, green chillies, ginger-garlic paste.
- Add ghee to the remaining oil and sprinkle half crushed whole garam masala and black pepper. Add all the wet paste, kitchen king masala and shahi garam masala then add salt and sugar to taste. Toss all along with cauliflower, 1 chopped green chilli and green peas till oil leaves sides. Then add little milk and water and cook on low flame till cauliflower is done. Sprinkle mitha attar and garnish with chopped coriander, few broken cashewnuts and raisins. Serve with pulao, roti, naan or paratha.
