This is the chili recipe the gang eats at Purdue Boilermaker football games. I always prep and cook the chili the night before and then reheat the next day. This is a combination of many different tomato-based chili recipes. Cincinnati-Style Chili: Prepare as above, except omit sweet pepper, basil, and optional garnishes.
Steps to make Chili:
- Using about 1 Tablespoon olive oil, saute veggies in pot adding salt and pepper to taste, on medium heat.
- Cook down on medium heat until soft. Add a little more olive oil if needed while cooking and then transfer to separate dish.
- Brown Ground beef and strain
- Same for Beef Chuck
- Everyone goes back in the pot on medium heat with a bit more olive oil. Mix together.
- Lower heat and add tomatoes and spice packets. Mix and Simmer for an hour. Mixing occassionally.
- Add Kidney Beans and simmer for another hour.
- Enjoy! Serve with noodles, fritos, cheese, onion, corn bread, jalepeno…..whatever you like!
Vegetarian skillet chili screams comfort food to me. Place the ground beef in a large pot and throw in the garlic. Cook over medium heat until browned. Drain off the excess fat, and then pour in the tomato sauce, chili powder, cumin, oregano, salt. In a large pot over medium heat, heat oil.
