It is the only cake I think my maternal Ammachi (Grandma) used to make. Of course, there weren't any ovens in my Grandma's home. So, I guess steaming was the only way to come out with a cake. Vattayappam is a famous steamed rice cake of Kerala.

Steps to make Vatteappam / Steamed Rice and coconut cake:
  1. Soak the raw rice for at least 4 hrs and grind it along with freshly grated coconut and Cook rice and grind it to a fine paste.
  2. Add crushed cardamom, sugar and salt and give is a nice grind again in the mixer. Add the yeast and final grind, just once.
  3. Pour the batter in a vessel and wait for at least 2 hours to puff it up. The batter comes out like fermented idli batter.
  4. Use a cake tin, grease it's sides and then pour this batter. Top it with cumin or dry fruits and steam it for 15 to 20 min till done.
  5. Remove it from steamer and cut them into pieces like a cake and serve them with tea or as snacks.

It is an any time snack. The name 'Vattayappam' means round shaped appam in Malayalam. Earlier days it used to be prepared with toddy. This is an easy breakfast to be prepared for guests. Who would not like a yummy breakfast with less work involved.
