- First, pour a layer of canola oil in your stovetop skillet, enough to cover the entire pan and heat on medium high heat.
- After oil has come to temperature, crack your eggs and add them to the pan. After eggs add bacon in a pile (gets more cheese that way)
- Once eggs start to brown on the bottom, flip so they fry up on the other side. Also flip your bacon at this point.
- Add cheese over top of bacon and eggs and let it melt, after it melts and covers bacon and eggs flip them so it fries in the oil. Repeat step for both sides.
I use scissors to cut the bacon into pieces and mix it into the egg mix. I top it with some parm cheese and another cup of shredded cheddar. It turns out puffy and beautiful. Cook the bacon and drain on a paper towel-lined plate. In a small skillet on medium heat, add unsalted butter.
