Steps to make Green Soup:
- Add oil and veggies to pan and enough water to cover veggies. Add bouillon and salt to taste, cover and cook until veggies are soft, about 20 minutes.
- Transfer to blender and blend. Top with pesto drizzle or what ever you fancy! I used olive oil and brags nutritional yeast.
Wash the greens thoroughly, trim off their stems, and slice the leaves. Peel the potato, or just scrub it well if you prefer, cut it into small pieces, and add it to the pot. This is a winter favorite, vegetarian soup that is adapted from Laurel's Kitchen. Mix in some milk to make a creamy version and feel free to experiment with vegetables or leave some un-pureed for more texture. Also, sometimes I blend it all after the addition of the spinach.
