- Prepare 2 cups water to cook quinoa

- Prepare Handful coriander leaves chopped

Steps to make Quinoa Poha:
- Wash and soak quinoa for 20 mins. In a saucepan boil two cups of water add 1/2 tsp salt. Once the water starts boiling add quinoa and cover and cook for 15-20 mins.
- Once quinoa will cook, each granule will get a little white tail.
- Now take a pan, heat oil add mustard seeds and cumin seeds and crackle them. Add all whole spices and fresh curry leaves. Fry onions till translucent.
- Add boiled potatoes and turmeric powder and saute for few mins. Now add cooked quinoa and salt and mix it well. Serve with chopped coriander leaves.
- Add lemon juice and serve, we can also add some roasted crushed peanuts as per our taste. Healthy and tasty quinoa Poha is ready.
