This is a delectable spicy roasted goat chopped into bite-sized pieces. When Asun is made at parties, usually a whole goat is brought to be the venue and smoked. This is what I remember about Asun. The goat is smoked raw over a giant charcoal lit barbecue, then it is cut into smaller sizes, placed on a heated slab and sautéed, (yes I used that word), with lots of onions and fresh pepper while oil is sprinkled on.
Steps to make Asun (spicy roasted goat meat):
- Clean the goat meat, debone and dice into bite size pieces. Seasoning with paprika, thyme, seasoning cube, blended onion and salt. Mix thoroughly making sure every part of the meat is seasoned. Cover with cling film or foil and place in the fridge to marinate for at least an hour or even overnight.
- Cook the marinated meat on medium heat until soft (not over cooked). The meat would cook in it own juice but if it isn't enough, add a little at a time until the meat is tender.
- Preheat the grill or set the fire if using an outdoor grill. Line the grilling rack with foil and spread out the cooked meat. Grill for about 30-35 minutes or until the meat is roasted and crispy on the outside. Set this aside.
- For the sauce. Place a pan/wok on medium Flame, add vegetable oil. Saute the onion for about 2 minutes. Add the pepper mix and fry. This will take about 5 minutes. Add a pinch of salt and seasoning to taste.
- Add the roasted meat to the sauce and mix. Garnish with the bell peppers and onion.
While you are grilling the meat, wash, cut and thread the green bell pepper, red bell pepper and the remaining onion on toothpicks. When the meat it well grilled/broiled, heat the vegetable oil in a dry clean pot. Add the pepper and the thick stock from cooking the meat (if any) and fry for a bit. Asun is simply smoked/grilled/roasted peppered goat meat. It is classified as a "Nigerian Small chop" and served at parties as an appetizer, alongside other finger foods.
