My tomato didn't have much flavor so that may have something to do with it. I prefer my own recipe of salmon with mango puree: salmon fillet breaded in a mix of ground toasted almonds and sesame seeds then pan fried in olive/sesame oils; topped with a puree of mango sauteed garlic and red pepper rice wine vinegar and a bit of sugar.

- Preheat oven to 450 F. Line a baking tray with foil. Don't miss the lining, believe me, it gets so much easier to clean the tray later :)
- Cut the mango in small pieces.
- Take about 1/4th of the mango pieces along with the ginger, garlic, lemon and soy sauce and process together till you get a thick sauce. Add salt and pepper to taste.
- Coat the mango sauce on the salmon generously and put the salmon on the foil.
- Bake in the preheated oven for 11-12 minutes, depending on the thickness of the salmon.
- While the salmon is baking, you can prepare a salad with the rest of the mangoes and any other ingredients that you prefer. I used spinach, avocados, mangoes, red onions and cucumbers with a balsamic-honey dressing.

Spread some olive oil on top of the foil. The mango salsa was delicious, and there is a lot left over, so I'm going to have to figure out how to reuse it tomorrow night. Didn't have time to clean the broiler, so we baked the salmon in the oven instead. I served this dish with plain white rice, which went nicely. Place salmon on a rack in a broiler pan coated with cooking spray.
