Bring a large pot of salted water to a boil. Rinse the noodles under cold running water to halt the cooking, then drain and transfer to a large mixing bowl. Toss red cabbage, red bell pepper, basil, cilantro, and peanuts with the. Soba noodles need to be rinsed under cold water afterwards!
Steps to make 10 minute soba special - vegan:
- Cook the soba according to the packet. When it’s ready, drain and rinse in cold water and set aside.
- In a jug, mix the miso and water until the miso is dissolved.
- Heat the oil in a pan on medium-hot heat. Add the spring onions and ginger. Cook for 2 mins.
- Add the mushrooms and sauté for 2-3 mins.
- Add the tofu and sesame seeds. Sauté for 1-2 mins.
- Turn the heat down to low. Add the miso/ water. Stir the tatsoi through and leave for 1-2 mins.
- You can add the soba to the tofu/ veg soup before serving. Or put the soba into bowls and then add the soup. Sprinkle with shichimi. Enjoy 😋
Take out a large soup bowl, add soba noddles and fill in broth. Add the cooked chickpea noodles and sauce mixture, folding gently to combine. Stir in the garlic and ginger and cook for another minute. Add the bok choy and tofu, stirring to coat. Looking for a quick meal fix?
