  1. Peel all potatoes and arrange in a pot large enough to fit them all in filled with water to cover them (add a dash of salt). Par boil potatoes until they are cooked half way through. Strain them and set aside to cool for a bit.
  2. Chop the shallots and set aside. Grease a meduim sized casserole dish with some butter. Slice all of the potato width ways.
  3. Layer the bottom of the dish with the potato. Pour enough thickened cream over the potatoes enough to cover them. Sprinkle over 1/3 of thr shallots, add a dash of salt and pepper and sprinkle over the cheese mixture to cover. Repeat the potato, cream, shallots, salt & pepper and cheese steps 2x more (you should have about 3x potato layers).
  4. Cover the casserole dish with aluminium foil and bake in 180○ Celsius for 60mins. Once the 60mins is up, remove the aluminium foil and bake for a further 15mins until the cheese on top goes golden brown.
  5. Remove from oven and let it rest for 10mins or so and it will be extremely hot. Serve with meat or winter vegetables.

The recipe I've been using called for frozen/thawed hash browns but since I don't like to wait for them to thaw I use "Simply Potatoes" hash browns in a bag usually found in the dairy section of the grocery store.
