- Get 1 tbsp coriander powder

- Take 1 tbsp oil
- Prepare 2 Cardamom
- Take 1 black Cardamom
- Get 1 tsp cumin seeds

- Make ready 1 bay leaf
- Take 1 tsp lemon squeeze
- Make ready Others
- Take 2 tsp ginger garlic paste
- Make ready 1 fried onion
- Make ready 1/2 cup curd
Instructions to make Veg Dum Biryani:
- Take a bowl and add 1/2 cup curd, 1 tsp coriander powder, red chili powder, 1/2 tsp turmeric powder, coriander leaves and mint leaves. Mix everything properly.
- Cut potato, cauliflower, carrots, paneer and French beans into large shapes and add them in the bowl. Add peas and mix everything all together.
- In a pan add water, cardamom, black Cardamom, cinnamon, bay leaf, salt, cloves into the water and bring it to boil
- When the water is boiling add rice to it and cook till it's half cook.
- Into a pressure cooker add 3 tsp of ghee
- In hot ghee add cumin, green and black Cardamom, cinnamon and fry till it's aromatic
- Once the spices are done, add ginger garlic paste to the cooker and cook till it's done
- Add veggies to the biryani mix into the cooker make sure the veggies are done upto 70%
- Add fried onion to the mix and mix it properly
- Adjust the consistency of the mixture using curd
- Add a small quantity water to the cooker
- On top of the mix lay down a layer rice and top it with fried onions and saffron milk mix
- Add another layer of rice and top it with the fried onion and ghee to the top. Add little pudina and garam masala on the top
- Close the lid of pressure cooker and heat it for 1 minute.
- Then keep the pressure cooker on top of a flat pan and cook it on low flame for 15 minutes
- After 15 minutes remove the cooker from flame and keep aside for 10 minutes without opening the lid.
- Serve fresh with curd or salan
