  12. Take 1 tbsp Coriander leaves chopped
  13. Prepare For tempering:
  14. Take 1 tsp mustard oil
  15. Make ready 1 tsp mustard seeds
  16. Prepare 1 tsp jeera seeds
  17. Take 1/4 tsp hing
  18. Take 1 tsp fennel seeds

Team gobhi methi with plain boiled rice or hot chapatis (Indian flatbread). It is also very easy to make. We have added very little spices to bring out the flavours of the winter produce. Fresh fenugreek leaves are a great source of iron and antioxidants, hence it is good to include in our diets regularly.

Instructions to make CAULIFLOWER / GOBHI MUTHIA:
  1. Take a bowl. Add cauliflower greens chillies, besan, whole wheat flour turmeric powder, coriander powder, oil, curd, coriander leaves, chopped garlic, ajwain, amchur power and salt in a deep bowl, add some drop of water & mix well.
  2. The dough divide into 2 equal portions and shape each portion into a cylindrical roll
  3. Arrange both the rolls on a greased sieve and steam in a steamer for 10 minutes. Remove and keep aside to cool slightly for 10 minutes. Cut each roll into pieces slices and keep aside.
  4. For the tempering, heat the oil in a karahi and add the mustard seeds, sesame seeds and asafoetida and saute on a medium flame for 30 seconds.
  5. Add the muthia pieces, toss gently and cook on a medium flame for 2 minutes, while stirring occasionally.Serve with green chutney.
