Steps to make Leek Samosa:
  1. Preheat oven to 150 C.
  2. Wash the leeks and drain them. Chop finely.
  3. To prepare the filling, combine all the ingredients together :leeks, onions, chili pepper, corn oil, black pepper and salt. Mix well and set aside.
  4. Cut the phyllo sheets into 4 cm wide strips and brush with water.
  5. To make the samosa: take a phyllo strip and put a teaspoon of the filling toward one end of the strip. Take one of the bottom corners and fold diagonally over the filling to form a triangle. Fold diagonally again, in the opposite direction to form another triangle. Continue folding while maintaining the triangular shape till the end of the strip. Use a bit of water to seal the end of the strip. Repeat until all the filling is used.
  6. Place the samosas on an oiled baking tray and bake until light brown. Serve hot.

To make the pastry, mix flour and salt into a bowl. Heat the oil in a small non-stick pan and fry the mustard seeds for about ten seconds, or until they begin to splutter. Serve samosas with an Indian meal, or pack them in your lunchbox. Serve up these crisp vegetable samosas as a tasty starter or side dish with your favourite curry.. Wash the leeks and drain them.
