This vegan and gluten-free dish is made with cauliflower, green peas, and fresh fenugreek leaves. Steps to make Green Peas and Cauliflower Sabzi:
- Wash the cauliflower and green peas. Steam it in a steamer or rice cooker and keep aside.
- Crush ginger, garlic, green chillies and curry leaves and keep aside.
- Heat oil in a cooking pan. When hot, add asafoetida.
- Add all the crushed ingredients and saute it well.
- Add the chopped onions and saute till the onions are translucent.
- Add turmeric powder, kanda lasoon masala and salt and saute for a minute or two.
- Add the steamed green peas and cauliflower and cover and cook for 5 minutes.
- Ready to serve.
Common spice powders, onions and coriander also do their bit in enhancing this dry subzi. Serve the Masala Cauliflower and Green Peas Subzi with rotis or parathas. Drain the salt water from the cauliflower florets and add the florets to the onion tomato mixture. Check if the veggies are done. Garnish with cilantro and cook for couple of minutes.
