Squeeze over the lime juice and check for seasoning. Can be made a day ahead - pour in the coconut milk, reduce by half, then leave to cool and keep in the fridge. Add the curry powder, chilli flakes and cumin seeds and fry for a further minute. Add the cauliflower florets, stir well to coat in the spices, and then add enough hot water to cover the cauliflower.

- Steam the florets and drain out the water
- Heat oil and temper cumin seed bay leaf and whole garam masala
- Add florets and Potatoes and saute well adding salt and turmeric powder
- Add ginger paste and saute well
- Add cumin powder and red chilli Powder and mix well
- Add tomato puree and saute well till it release oil
- Add water and simmer till everything get boiled well
- Add sugar boil well
- Finally add ghee and garam masala powder
- Serve it with rice or chapati
Heat the oil in a saucepan. Stir in the tomatoes and sugar. Add the cauliflower, potatoes and split chilli, seasoning to taste. Stir in all the spices, season, and cook for a few minutes. Drain and add the chickpeas, then the spinach.
