Stuffed squid (Turkish: Kalamar dolması) is a generic name for meals made of olive oil, Spanish onion, garlic, rice, tomatoes, salt, black pepper, mint leaves, parsley, squid and tomato juice. It is mostly popular in Turkey and Greece. The stuffing is a delicious mixture of rice, garlic, tomato paste, parsley, and onion.

The ingredients needed to make Onion- stuffed squid:
  1. Get 8 large squids
  2. Get 10 medium red onions
  3. Make ready 16 prawns
  4. Prepare 6 tsp garlic and parsley (chopped)
  5. Prepare olive oil, extra virgin
  6. Get 300 ml dry white wine

To cook the squid, put a nonstick. Place the stuffed squid on a medium-large pan and repeat for the others. Add the remaining stuffing from the pan to the tray and season with salt and pepper. Pour in the rest of the tomato sauce, Passata, white wine and hot water so the squids are almost covered.

Steps to make Onion- stuffed squid:
  1. Clean the squids. Chop the tentacles, and the fins finely and put them away.
  2. Put olive oil on a crock pot. Chop the onions julienne styke very finely and add on the oil when it's hot.
  3. Boil the prawns for 1minute so they don't get cooked through. Once done put them in ice-cold water" peel them and chop them.
  4. When the onions are golden add the chopped squid parts. A couple of minutes later add the prawns. Season.
  5. Add 180ml of white wine and let it reduce slowly. Correct seasoning.. Once done let it rest for 2-4 hours. Mix the amount of olive oil needded for the pan, mix with garlic&parsley and let it rest until needded
  6. Start stuffing the squids and heating the oil with the garlic&parsley.
  7. Once the squid id stuffed, seal it with a wood toothpick.
  8. Fry the squid for 5 minutes and add rest of the wine, season and let reduce slowly.
  9. Serve hot.

In Sardinia, squid are served with a sauce made from lemon, garlic, parsley, and olive oil. In Slovenia, squid are eaten grilled and stuffed with pršut and cheese, with blitva (Swiss chard). In Russia, a lightly boiled julienned squid with onion rings, garnished with mayonnaise, makes a salad. Another dish is a squid stuffed with rice. When I was in the Philippines me and my colleagues loved to eat in this Chinese restaurant called "Wok inn" in Malate, Manila and we always order this stuffed squid dish which is really good but I don't know the name.
