Brush the cutlets on both sides with oil. Make sure that you brush them on both the sides. This helps in even browning of the cutlets. Remove from oven when they are golden brown on both the sides.

- Combine boiled potatoes, carrot, capsicum and sweet corn into a bowl.
- Add boiled quinoa into the vegetable mix.
- Add all the spices and combine well to form a dough
- Now, add chopped coriander leaves and mix.
- Take a small portion of the dough, shape it into a ball and press it gently to make a patty
- Similarly, you can prepare all the cutlets.
- Heat and grease a pan with a little oil & place the prepared cutlets into the pan.
- Flip the cutlets and cook until both the sides turn golden.
