  9. bake in centre of oven for 20 to 25 mins
  10. serve with steamed brocolli and/or asparagus… as a side with a main meal… or just as a quick winter warmer

Top with a thin layer of onion slices, a little shredded cheese, then season with a pinch of salt and some pepper. Drop the spinach into the pot and cook for two minutes, then tip the whole thing into a colander and leave to drain. Top with a layer of onions and season. Place half of potatoes in bottom of casserole dish. Place layer of onions over potatoes.
