The ingredients needed to make Pansit Bihon:
  1. Get 1 chicken breast
  2. Get 1 pc cabbage
  3. Take 1 pc carrots
  4. Take 5 pcs dried mushroom
  5. Get Garlic and shallots
  6. Make ready Rice noodle
  7. Get Soy sauce, fish sauce, black pepper, dark sauce

I love pancit, which means noodles in Filipino language. Many years ago, I tried pancit at a Filipino restaurant and fell in love with it. Grease a large pan or wok with oil. Add the chicken broth, the shredded chicken breast and all the vegetables until cooked.

Instructions to make Pansit Bihon:
  1. Wash all the veges and cut all into stripes. Beforehand soak dried mushroom for about 10 mins in hot water and cut in stripes. Including chicken meat.
  2. Soak rice noodle for abt 5 mins. Drain and set aside
  3. Get a wok let it hot and put oil. Then saute shallots and ginger until fragrant. Then the meat and mushroom. Stir fry for a while then add all the remaing ingredients.Add water. Mix and cover to simmer.Then season according to your taste. When half done remove all from the wok. Set aside
  4. Then add all the soaked noodle make sure to mix it so that all will absorb the sauce. When its almost done then add veges mix them all well.Remove from the wok.

I used a combination of recipes for this one and it tastes very much like the pancit I enjoyed from the many Filipino friends I made while my hubby was in the Navy. It looks like more work than it actually is.try it and have some fun. Pancit bihon and pancit canton are two of the most popular versions of pancit. While many variations exist even within these two types of pancit, the main difference between the two is the type of noodles used. Pancit bihon calls for bihon noodles (thin rice vermicelli, sometimes called rice stick noodles).
