  5. Add cheese and additional toppings to the flipped egg.
  6. When cheese melts, gently fold the egg over in half and slide onto your waiting plate.
  7. Eat immediately, or you can grab your phone/camera and take a bunch of awesome pictures like I'm known to do with every meal now….

Light and fluffy vegan omelette served with sautéed mushrooms, tomatoes, onion, vegan cheese and vegan sausage for a fabulous vegan breakfast of champions.
