The ingredients needed to make Tandoori Chilla:
  1. Prepare Marination
  2. Take 300 gm curd
  3. Take 1 star anise
  4. Make ready 1/2 tsp black pepper corns
  5. Get 1 tsp jira/(cumin seeds)
  6. Prepare 1 javitri
  7. Get 2-3 cloves
  8. Get 1 tsp Coriander Seeds
  9. Take 1/2 inch cinnamon stick
  10. Make ready 1/4 Tsp saunth(dry ginger)
  11. Take 1 nutmeg
  12. Take to taste salt
  13. Get 2-3 tsp kashmiri red chilli powder
  14. Prepare 1/4 Tsp elachi (Cardamom)powder
  15. Make ready 1 black cardamom
  16. Make ready 1 lemon
  17. Get 2 tbsp mustard oil
  18. Prepare 7-8 garlic cloves
  19. Take 1/2 inch ginger
  20. Get 1-2 tsp kasoori methi
  21. Prepare Chilla Batter
  22. Make ready 3/4 cup besan/gram flour
  23. Take 1/2 cup marination
  24. Prepare pinch baking soda
  25. Get to taste salt
  26. Prepare Veggies Filling in Chilla
  27. Get 1 onion
  28. Prepare 1 capsicum
  29. Make ready 1 carrot
  30. Prepare 200 gm paneer
Steps to make Tandoori Chilla:
  1. Marination - Roast all the spices on tawa except salt, red chilli powder, ginger and garlic,elachi powder.let them cool. grind them to make powder. take curd in a bowl. Add chopped ginger garlic or ginger garlic paste in it. add roasted masala powder. add elachi powder. add salt to taste, red chilli powder, lemon juice, mustard oil, kasoori methi.mix them well.Place hot wood coal in a bowl. add ghee in top of it. place the bowl in batter and cover it to give smoky flavour. coal step is optional.
  2. Add 3/4 cup besan in a bowl. add 1/2 cup marination. Add some water to make batter like chilla(neither too thick nor too thin). ajust salt acc to the taste. add few coriander leaves if required.add pinch of baking soda. mix them well.make sure there are no lumps.
  3. Cut onion in slices. capsicum, carrot as Julienne. cut paneer as long stick. add the veggies in marination to coat it. keep it aside for 10-15 mins. Take a pan. add 1 tsp ghee. put the veggies on the pan to roast it. some water will get released while cooking them. let the water evaporate. donot over cook the veggies. turn off the heat when there is no watery texture.
  4. Take a non stick pan or dosa tawa. let it heat. pour the chilla batter with ladle on pan. spread the batter in circular motion like we do for dosa. add some marinated cooked veggies in between of chilla. let it cook for 2-3 minutes on low heat. fold the chilla once chilla turns medium brown colour. turn off the heat. grate some paneer on top of it. paneer is optional. u can add some grated cheese in chilla as well.
