- Prepare 4 Bay leaves
- Get 1 Blade mace(javitri)
- Take 1 Star anise(phool chakri)
- Make ready to taste Salt
Instructions to make Vegetable Biryani:
- Take a bowl and soak the 2 cup basmati biryani rice.
- Take a cooker add 2 tblspoon ghee/oil, add 5-6 cloves, 4 green cardamom, 1 inch cinnamon leaves, 2 bay leaves, 1 blade mace javitri, 1 star anise(phool chakri) stir well. Now add the soaked rice and mixed them well. add 2½ cups of water. Cook the rice.
- Take a pan or kadhai, add 3 tblspoon oil,add 1 tspn jeera seeds, 4 cardamom,2 bay leaves,1 cinnamon stick.Add the 2 chopped onions and stir fry. Add 1 small chopped potato and stir fry till the potato becomes half cooked. Add ginger- garlic paste and cook for 1 minute. Add all chopped vegetables and stir fry till it's half cooked.
- Add the peas and 8-10 cashew nuts and then cook for 1 minute. the 1 chopped tomatoes and cook for 2-3 minutes.
- Add the ¼ tspn turmeric powder, 2 tspn coriander powder,1tspn red chilli powder,1 tspn jeera powder, 2-3 tspn biryani masala and salt. Cook for 2-3 minutes.
- Add 2-3 tblspoon curd/yoghurt. Mix them well and cook till all vegetables cooked(not too soft). Add the 1 tblspoon coriander leaves and mix them well.
- Now the vegetable is ready,take the cooked rice and mix them well and garnish with fried dry onions,coriander leaves and saffron milk(optional). Vegetable Biryani is ready to serve.
