- Prepare 2 cup water
- Make ready 2 tbsp Coriander leaves
- Get (Ingredients for bhatura):-
- Get 2 cup maida /all purpose flour
- Make ready 1 tbsp Rava/ Semolina
- Take 1 tsp sugar
- Take to taste Salt
- Get 1/2 tsp baking powder
- Prepare 1/4 tsp baking soda
- Get 2 tsp oil
- Prepare 1 cup curd
- Take As needed Oil for deep frying
- Prepare As needed Maida / Plain flour for dusting
- Prepare (For boondi Raita):-
- Get 1 cup curd
- Make ready 2 tbsp boondi soaked in a water for 5-6 minutes
- Get 1 tbsp onion chopped
- Get 2 tsp Coriander leaves chopped
- Get 1/2 tsp Red chilli powder
- Prepare 1/2 tsp cumin powder
- Prepare 1 pinch chaat masala
- Take to taste Salt
Instructions to make Special Lunch : Choley, Bhature, Boondi Onion Raita:
- Choley:- Firstly, heat oil in a cooker, saute bay leaf, cardamom and cumin seeds. Add onion and ginger garlic paste saute till it turns golden brown.
- Add tomato paste and saute till they strt releasing oil.
- Add all the spices mix well, cook for 1-2 minutes.
- Add boiled chickpeas and 2 cup water give a good mix.
- Pressure cook for 2-3 whistle on medium flame.
- Allow the pressure to release by itself sprinkle Coriander leaves. Ready
- (Bhatura):- Firstly, in a large mixing bowl take maida, rava, sugar, salt, baking powder and baking soda mix well.
- Add oil rub with flour, also add curd and start to knead dough.
- Grease the dough with oil, cover and rest for 2 hours.
- Make balls between your palm.
- Roll dough evenly into circles using rolling pin.
- Heat oil in a deep frying pan or kadhai.
- Drop bhatura into hot oil and press with the spoon to puff up.
- Flip and fry the. Bhatura till golden.
- Then drain the bhatura into tissue paper to remove excess oil.
- Finally Serve Bhature with choley, boondi Raita & pickle.
- (For boondi Raita):- Take a bowl whisk curd add salt, cumin powder, red chilli powder and add soaked boondi, onion, coriander leaves mix well sprinkle little chaat masala Ready.
