  1. Take 1 lb chicken tenderloins
  2. Get 3/4 cup Caribbean Jerk Marinade
  3. Take 1/2 small onion, chopped
  4. Get 2 celery ribs, chopped
  5. Make ready 1 garlic clove, minced
  6. Prepare 2 tbsp butter
  7. Get 1 cup heavy cream
  8. Get 1/2 cup parmesan cheese
  9. Make ready 1 tbsp old bay
  10. Take 1 tsp black pepper
  11. Prepare 1 tsp dry oregano
  12. Take Green onions and parsley for garnish
  13. Prepare Tortellini- enough for 2 people
Instructions to make Jerk Chicken Alfredo:
  1. Place chicken and jerk marinade in a Ziploc bag, for about 2-4 hours in the fridge.
  2. Once chicken has marinated, place a skillet on medium high heat with a dash of olive oil. Add chicken. Cook 5 min per side. Remove and set aside.
  3. In same skillet, add another dash of oil, then celery and onion. Cook 5 min, add garlic, cook 1 min. Remove and set aside.
  4. In same skillet (now it should have all the yummy bits and a bit of liquid from the chicken and veggies) turn heat to low, add butter and cream. Whisk for a couple min, add Parmesan. Whisk continuously until thick, about 3-5 min. Add pepper, old bay, and oregano. Keep heat on low, whisking occasionally.
  5. Cook tortellini per package directions. Once drained, add to Alfredo sauce, along with veggies. Plate.
  6. Slice chicken up, and place on top. Garnish with green onion and parsley.
