  20. Prepare 1/2 tablespoon Cumin-pepper-ginger-green chilli paste
  21. Prepare 2 tablespoons Mustard oil

Gatte ka pulao is spicy rice dish from Marwari cuisine of Rajasthan. This traditional Rajasthani rice recipe is made with chickpeas flour dumplings called gatta and rice cooked with a lot of aromatic spices. A flavourful delicacy from Rajasthan prepared by stir-frying rice with gatte and aromatic spices. Gatte are dumplings prepared with gram flour and spices that are first cooked in.

Instructions to make Gatte ka Pulao:
  1. Take gram flour, 1 teaspoon coriander powder, 1/2 teaspoon red chilli powder, 1/4 teaspoon turmeric powder, salt and carom seeds and mix it.
  2. Now add clarified butter in it and mix it well.
  3. Add lukewarm water in it as per requirement and make semi-soft dough.
  4. Divide it into 3-4 big chunks and make cylindrical pieces of it.
  5. Boil 2-3 cup of water in a pan and drop these cylindrical pieces in it and cook it until pieces got white-colored bubbles over it.
  6. Take it out from water and cut it into small pieces and save water to use later.
  7. Heat 2 tablespoon of oil in a pan and stir fry these pieces until it get light golden colour.
  8. Heat 2 tablespoon of oil in a pressure cooker then add cumin seeds, black mustard seeds and asafoetida in it and allow it crackle.
  9. Then add cinnamon stick, green cardamom, black cardamom and cloves in it and allow it crackle it too.
  10. Add Cumin, pepper, ginger, green chilli paste in it and cook it for a minute in medium flame.
  11. Meanwhile, take coriander, mint paste in a pot along with curd, then add turmeric powder, red chilli powder and coriander powder, salt, lemon juice and 2 tablespoon of mustard oil and mix it well.
  12. Then add this mixture into pressure cooker and cook it for a minute or 2 on high flame.
  13. Now add soaked rice in it and mix it well, then add that water which we've saved before in it as per the requirement and cook it for 1-2 whistle then switch off the flame.
  14. Gatte ka pulao is ready to serve now.
