A balti or bāltī gosht (Urdu: بالٹی گوشت ‎, Hindi: बाल्टी गोश्त) is a type of lamb meat or goat meat curry served in a thin, pressed-steel wok called a "balti bowl". The name may have come from the metal dish in which the curry is cooked, rather than from any specific ingredient or cooking technique. Balti curries are cooked quickly using vegetable oil rather.

Steps to make Balti Chicken:
  1. Heat the oil in the wok. Throw in the unions and fry until they are golden brown.
  2. Add the tomatoes and stir well.
  3. Add cinnamon stick, cardamoms, peppercorns, cumin seeds, ginger, garlic, garam masala, chili powder and salt. Lower the heat and cook for 5 mins.
  4. When cooked put half the ingredients into blender to make into puree.
  5. Add the chicken pieces, cover the wok with lid. Check occasionally and stir fry for at least 7 mins or until the spice mixture has completely penetrated the chicken pieces.
  6. Add the yogurt in.
  7. Lower the heat and cover the wok with lid. Cook very gently for about 20 mins.
  8. Finally, add lemon juice, green chilies and coriander and slices of pepper and serve at once.
