This veg pulao recipe is one of the basic dish made often in many Indian homes. It is also the one most commonly found on the menu for parties, buffets & celebrations. Vegetable Stock: Some pulav recipes are cooked in vegetable stock instead of water. Pulao made in a vegetable stock has a different taste and color.
Steps to make Veg pulav (aloo bhat):
- Soak rice in water and chop the veggies in bite size pieces.
- Heat oil in the pan. Add all the whole spices and fry it for a minute. Add onion and fry it.
- Add ginger garlic paste, red chilli powder, turmeric and salt. Add all the chopped veggies. You can choose your own veggies.
- Add curd and let it cook for 5 minutes. Now add soaked rice and saute on medium flame.
- Add 5 glasses of water and let the rice cook.
- When water is almost absorbed then add chopped coriander and garam masala powder and lower the flame and let it cook for 5 to 10 minutes. Ready to serve.
Spices and Herbs: You can always alter the amount of spices and herbs as per your taste. If you like spicy veg pulao then you can add more green chilies.
