  4. Put mixture in a casserole dish. To speed up cook time spread out the loaf. Add bacon to top of meatloaf.
  5. Preheat oven to 400 and cook for 1 1/2 hours or till done in center

Heat the oil in a large saute pan over high heat. I'm not the biggest fan of meatloaf but I liked the veggie addition. Vegetarian Meatloaf is something I have been making for years. It is extremely filling, has less than half the calories of regular meatloaf, and tastes delicious. It is always a huge hit in my house.
