Steps to make Whole Wheat Banana Bread:
- Grind cinnamon stick and flax seeds to make fine powder. To this add 1/4 cup water, mix well and keep aside. This is flaxmeal, a substitute of egg.
- Mash banana in a bowl using fork and make a smooth batter.
- Grind jaggery to fine powder and add it to mashed bananas.
- Next add virgin coconut oil and mix well.
- Add vanilla extract, flaxmeal (we prepared earlier) and mix well using whisk.
- Now sieve in the whole wheat flour to wet ingredients.
- Next we need to add oats, baking powder, baking soda, salt. Do not mix yet.
- Lastly add raisins and coat raisin into flour so that it won't stick to the base while baking.
- Once raisins are coated in the flour, fold dry ingredients into wet ingredients.
- Grease the bread loaf tin with coconut oil, line it with parchment paper and transfer the batter into tin. Level it evenly using back of spatula.
- Lastly sprinkle some chopped cashews, flaxseeds and oats.
- Bake it in the preheated oven at 180°C for 15-18 mins. Once baked, let it cool for 20 mins before slicing.
