Many recipes will call for the use of Sichuan peppercorns. Once the vegan meat mixture is cooked, we also add in chopped bok choy for some refreshing green. The sauce is probably the most important component of these vegan dan dan noodles. It adds so much flavor to both the meat and noodles!

Instructions to make Vegetarian Dan Dan Noodles with Soy Meat:
  1. If using "Veggiemade," prep first by soaking in water, then drain.
  2. Boil the noodles. This time, I used healthy ashitaba konnyaku noodles from Taiwan. They're very low in calories, but are chewy.
  3. You could also substitute with yakisoba or somen noodles.
  4. Stir-fry the minced veggie meat in a frying pan with the olive oil, garlic, and salt.
  5. When the noodles from Step 3 have boiled to the colour shown in the photograph in Step 3, add the Shaoxing wine (or cooking sake) and soy sauce to the frying pan. Bring to a boil, then reduce the heat to low and add the spring onion.
  6. Stir fry until the spring onion has completely wilted, then turn off the heat.
  7. Transfer the minced mixture to a bowl.
  8. Add 2 tablespoons of sesame paste to the bowl along with 1 teaspoon of mirin and 2 tablespoons of water. Mix well.
  9. Add the noodles to a plate and pour the minced mixture over the top to finish.
  10. When serving, make sure to evenly mix the noodles and minced veggie meat! Feel free to add hot sesame oil and doubanjiang sauce to taste.

Whisk everything together well and use in both the meat mixture and for the noodles. Hands-down, my fave vegan dan dan noodles recipe in the world - even if I say so myself! I can afford to brag because this recipe is almost entirely based on the epic Freddie Janssen (aka @freddielookatme) recipe for Dan Dan Noodles with minced pork. She's a genius and, unlike me, is an actual trained chef. Vegetarian Dan Dan Noodles defy tradition since the traditional topping for the fiery noodles normally starts with ground pork.
