- Get 500 gm bittergourd / karela
- Prepare 1 big onion finely chopped into long slices
- Make ready 1 tbsp Salt
- Take 4 tbsp oil/ghee
- Prepare 1/2 tsp mustard seeds
- Prepare 1/2 tsp cummin seeds
- Make ready 1/4 tsp tumeric powder
- Prepare 1 pinch asafoetida (hing)
- Make ready 1 tsp red chilli powder
- Get 1 tbsp corainder-cummin seed powder (dhania jeera powder)
- Take 2 tbsp finely chopped jaggery (add as per your taste)
- Make ready 1 tsp aamchur powder
- Get 1 tbsp fried cashewnuts pieces
- Make ready 1 tbsp raisin (kismis)
- Prepare Finely chopped fresh coriander leaves to garnish

Instructions to make Bittergourd-Onion Subzi:
- Wash,peel off skin from bittergourd. Scrap the inner seed part from bittergourd. Cut into round slices. Again cut into halves as shown. Mix salt in it and keep aside for 1/2 hour.
- To make fried onion..peel and chopped onion into long slices. Heat 3 tbsp oil in kadhai on high flame, after one minute add onion slices and lower the flame to medium flame.
- Saute onion for 5-7 minutes till it changes colour and turn crispy golden brown. Strain to remove excess oil.(Keep the strainer on same kadhai). Keep aside.
- Preheat Airfryer for 5 minutes at 180 temperature. Add 1 glass of water in chopped in salt mixed bittergourd. Squeeze out water from it(to remove bitter taste)and pat dry on kitchen towel as shown.
- Add & mix 1 tbsp oil in pat dried bittergourd pieces. Place it in Airfryer mesh basket and airfry for 10-12 mins at 180 temperature till crispy.
- Mix airfried bittergourd & fried onions in bowl.
- In same kadhai (we fried onions), heat oil. Add mustard seeds and cummin seeds. As it splutter add asafoetida (hing), tumeric powder.
- Add bittergourd- onion mixture. Add red chilli powder, corainder-cummin seed powder, aamchur powder and jaggery. Mix well. Cook till jaggery dissolved. Add & mix fried cashewnuts pieces, raisins. Off the flame.
- Serve/ Relish Delicious Bittergourd-Onion Subzi garnishing with finely chopped fresh coriander leaves.
Interestingly, the word also stands for a raw vegetable. So, raw potato (aloo) is a sabzi, and dum aloo i.e. potato curry is also a sabzi. Method For onion and karela sabzi. To make onion and karela sabzi, combine the bitter gourd and a little salt in a deep bowl and mix very well. Squeeze all the water from the bitter gourd and place them on a kitchen towel to dry them completely.
