More often than not, I make tuna fried rice. An added bonus is the vegetables in it, so Becca gets something healthy-ish. Season to taste with salt and black pepper. Start with a base of the cream and then rice, and then cream and so on until you end up with cream at the top.
Instructions to make Rice with Tuna and Vegetables:
- Start by frying the onion in olive oil. Add the garlic a few moments later and cook for a minute or so until fragrant. Do not let the garlic or onion burn.
- Next add the rice, tomatoes, vegetables and peppers.
- Mix everything well and allow to gently fry for a few minutes.
- Now mix the curry powder, stock cube and season with salt and pepper. Add enough water to almost cover the rice (More water can be added later). Allow to cook for about 12-14 minutes.
- Half way through add in the peas.
- Remove from the heat and allow to rest.
- Drain the tuna and flake with a fork.
- Transfer the rice to a heat proof bowl. Add the tuna and crab sticks and gently combine together. Serve immediately and enjoy.
All vegetables are medium size and peeled, unless specified. Add the tuna and rice and cook until heated through. Remove from the heat, add the tomatoes, the chopped herbs and some pepper. Blanch the tomatoes, rinse in cold water, peel, quarter, core and cut flesh into small cubes. You can use whatever ingredients you find in your refrigerator and it's sure to delight you and everyone at the table.
